Brisket is a cut of meat from the breast or lower chest of beef. When cooked properly, it is easily a crowd favorite. We like to smoke ours or cook it in the dutch oven (low and slow is the key)! It’s great in sandwiches, tacos, or on its own.

Short ribs are from the lower part of the cow and, while tough initially (due to connective tissue) become succulent and tender when cooked slowly over low heat. They are well-marbled making them juicy and delicious!

Our soup bones come from the shank, knuckle, or neck and are meaty bones that we use to create flavorful beef broth and hearty stews. We recommend roasting them to really pull out the flavor before throwing them in your pot to simmer.

These canoe cut marrow bones are nutrient dense as they are rich in collagen and amino acids. We recommend roasting at a high temperature (400-450) for 15-20 minutes to pull out the marrow.
